Ingredients

G 300 fresh porcini mushrooms
G 40 dried reindeer meat
N 1 medium potato
G 20 schüttelbrot
N 1 garlic clove
Thyme (to taste)
Extra virgin olive oil (to taste)
Salt (to taste)

Preparation

  • Clean the potato, slice it thinly and blanch it for a few seconds, then place it in cold water and set aside.
  • Clean the porcini mushrooms, cut them into very small pieces and sauté them over high heat for about 3 minutes in a pan where the garlic clove (left whole) has first been warmed in the oil, then removed.
  • Blanch the thyme for a few seconds in boiling water, then place it in cold water.
  • Using an immersion blender, blend the potatoes, porcini mushrooms and thyme until smooth. Adjust the seasoning and add a couple of tablespoons of extra virgin olive oil.
  • Cut the reindeer meat into thin strips and set aside.
  • Serve preferably in a bowl the size of a teacup, layering the porcini cream first, followed by the reindeer strips, crushed schüttelbrot and a few sprigs of fresh thyme.
