Preparation

  • Using a vegetable peeler, prepare around 20 thin asparagus strips lengthwise to create the lattice that will wrap the meat. Blanch them for 1 minute in salted water, then immediately cool them in cold water. Arrange and weave the strips together to form an even grid.
  • Cook the remaining asparagus for 3–5 minutes, blend with a little cooking water, strain and season to obtain a smooth cream.
  • Cut the leek into thin strips and fry at 120°C until crispy. Clean the hare saddle, season with salt and sear in a hot pan with a knob of butter for about 2 minutes on each side.
  • Place the asparagus sauce on the plate, arrange the meat on the asparagus lattice and gently wrap it. Finish with crispy leek, raw asparagus tips, onion powder and marinated onion petals. Serve hot.
