Ingredients

  • N 12 duck drumsticks
  • N 24 slices stewed pancetta
  • Salt, to taste
  • Black pepper, to taste
  • Barbecue sauce, to taste

Preparation

  • Start by preparing the duck drumsticks, first removing the cartilage. Using the back of a knife, gently detach the meat from the bone and push it downwards, then season with salt and black pepper to taste.
  • Wrap each drumstick with one or two slices of stewed pancetta and lightly brush with barbecue sauce before cooking.
  • Then cook using one of the following two methods: on the barbecue, with indirect heat and therefore not directly over the embers, or in a fan oven at 180°C / 356°F for about 20–25 minutes. In both cases, it is advisable to check with a probe thermometer that the internal temperature of the meat reaches 72–74°C / 162–165°F.
  • Serve immediately, while still hot, on a bed of lightly dressed red cabbage. If desired, finish with a further brushing of barbecue sauce, bearing in mind that this may reduce the crispness of the pancetta.
