Ingredients

G 750 fallow deer meat
N 2 tablespoons cornflour
N 4 medium potatoes
N 1 tablespoon lard
N 2 white onions
N 2 tablespoons brown sugar
N 2 tablespoons white vinegar
N 4 eggs
N 1 bunch chives
N 2 bay leaves
N 5 juniper berries
N 2 sage leaves
Salt and black pepper, to taste


For each hour of running at a medium-low speed (8 km/h) the AVERAGE caloric consumption is 8 Kcal (per) kg * (per) h (height) a reference average female weight of 60 kg and a male average weight of 80 kg is considered.*

Preparation

  • Brown the piece of fallow deer meat on all sides in a very hot frying pan with a drizzle of oil. Then transfer it to a pressure cooker with the bay leaves, juniper berries, sage, salt and black pepper, cover with water and cook for about 40 minutes from the moment it comes to pressure.
  • Meanwhile, boil the potatoes in salted water. Once cooked, slice them thinly and brown them in a frying pan with the lard until well golden.
  • Slice the onions finely and let them soften in a frying pan with a drizzle of oil, the brown sugar and the white vinegar. Allow the liquid to reduce without letting the onions take on too much colour, so that they become soft and lightly caramelised.
  • When the meat is ready, cut it into strips. Strain the cooking liquid and bring it to the boil; then add the cornflour, previously dissolved in a little cold liquid, stirring carefully to avoid lumps. Let it thicken slightly and remove from the heat. This sauce will be used to coat and reheat the meat before serving.
  • Finally, cook the eggs sunny-side up in a frying pan with a drizzle of oil. Arrange a layer of golden potatoes in the centre of the plate, place a generous portion of fallow deer strips with their cooking sauce on top, add the caramelised onions around them and finish with the sunny-side-up egg. Complete with finely chopped chives.
