Ingredients

For the burger:

G 750 wild boar meat
G 13.5 aromatic salt (for 1 kG: 18 G) made with rosemary, fenugreek, and juniper

Spicy mayonnaise:

N 1 egg
N 1 teaspoon mustard
Ml 200 sunflower oil (grapeseed oil preferred)
Juice of half a lemon
Salt to taste
Tabasco to taste
cayenne pepper to taste

Caramelized red onions:

N 2 red onions
N 2 tablespoons brown sugar
A dash of red wine vinegar

To finish:

N 12 slices of Lardo di Colonnata
red cabbage to taste
lettuce to taste

Preparation

  • First, grind the wild boar meat and season it with aromatic salt. Divide the mixture into 4 parts of about 185–190 g each and form the patties.
  • Now prepare the spicy mayonnaise: put all the ingredients, except the Tabasco and cayenne, into a tall glass suitable for an immersion blender. Place the blender at the bottom and turn it on at full power. After a few seconds, it will start to thicken; then slowly lift it up to emulsify fully. In just over a minute, the mayo will be ready. At this point, stir in the Tabasco and cayenne pepper to your liking using a spoon or ladle.
  • Thinly slice the onions and soften them in a pan with 2 tablespoons of sugar, preferably brown, and a splash of red wine vinegar—just a little. Once the liquid has thickened and reduced, remove from heat.
  • Heat the bread on both sides and spread the base with mayonnaise. Cook the hamburger as you all prefer; I recommend medium or well done. Add the caramelized onion, then a leaf of lettuce, then the hamburger. Continue with the red cabbage, lightly seasoned with salt and oil for a more intense flavor, and finally the Colonnata lard. Close with the top part of the bread and secure everything with a toothpick. Open a beer and enjoy your meal!
