Ingredients

1 kg wild boar loin (cut into 1-2cm cubes)
30mL chopped rosemary
4 cloves of fresh garlic minced
1 lemon juiced and zested
125mL olive oil
15 mL red wine vinegar `
Salt and freshly cracked black pepper to taste
Skewers for the meat (wood or metal)
1 lemon for garnish cut in half

Preparation

  • Combine the olive oil, lemon juice, zest, vinegar, garlic, rosemary, salt, and pepper in a large bowl.
  • Pour over the boar meat and mix well to coat evenly.
  • Let marinate in the refrigerator for at least 4 hours or overnight.
  • If using wood skewers, soak in water overnight to prevent burning, then skewer the boar meat.
  • Preheat the grill to 230°C (450°F) for 10 minutes, then place the skewers on the grill.
  • Grill the skewers for 4–5 minutes per side, or until an internal temperature of 65°C (150°F) is reached.
  • Grill the lemon for an added sweet citrus flavor to squeeze on the cooked skewers.
