Ingredients

G 200 chamois loin
Aromatic salt (fenugreek, juniper, and rosemary) to taste
For the tacos:
G 250 grated carrots
G 70 smoked scamorza cheese
N 1 egg
Salt and pepper to taste
For the cheese spread:
G 75 goat cream cheese
G 65 Greek yogurt
For the lime mayonnaise:
N 1 egg
mL 210 sunflower oil
N 2 limes
Mustard and salt to taste

Preparation

  • Start by preparing the carrot tacos. Grate the carrots and scamorza cheese, then season with salt and pepper. Add the egg and mix everything together thoroughly. Spread the mixture between two sheets of parchment paper, aiming to get an even thickness—the thinner the mixture, the crispier the taco will be.
  • Bake in a fan oven at 180°C (350°F) for about 10-15’, depending on the level of crispness you prefer. Once baked, cut the tacos into the shape you like, using a cookie cutter or a cup, and trim the edges with a knife. Let the tacos cool on a rolling pin to maintain their crispy shape.
  • Meanwhile, prepare the cheese spread by mixing the goat cream cheese with the Greek yogurt until smooth. You can do this with a whisk or a fork.
  • For the lime mayonnaise, place the egg, lime juice, sunflower oil, a pinch of salt, and a touch of mustard into a tall container suitable for an immersion blender. Start blending from the bottom, and as the mayonnaise thickens, gradually lift the blender. In a few seconds, you’ll have fresh and fragrant mayonnaise.
  • Next, prepare the chamois meat by finely chopping the loin with a knife, either coarsely or finely, depending on your preference. Season with a bit of lime mayonnaise and a pinch of aromatic salt.
  • Once the tacos are completely cooled, spread a layer of cheese spread on each taco, then top with the chamois tartare. Finish with a few drops of lime mayonnaise, and if desired, garnish with some fresh sprouts, easily found at fruit and vegetable stores.
  • Serve immediately for a fresh and flavorful appetizer that combines the taste of game meat with a touch of freshness and crunch.
