Ingredients

G 600 roe deer saddle
G 30 char caviar
Wild herbs to taste
Mustard seeds to taste
Salt and pepper to taste

For the broth:
G 400 roe deer bones
G 100 mushrooms
N 2 onions
N 2 celery stalks
Bay leaves to taste
Extra virgin olive oil to taste

Preparation

  • Prepare the broth by sautéing the onion in a large pot with EVO oil over high heat. Add the roe deer bones, previously roasted in the oven, mushrooms, celery, and bay leaves. Cover with water and reduce the broth by 50%. Strain and season with salt if necessary.
  • Trim the roe deer saddle and season with salt, pepper, and mustard seeds. Sear it over a very hot grill without fully cooking it. Then, portion the meat into regular pieces.
  • Place the roe deer on the plate, garnish with char caviar and wild herbs. Finally, pour the hot broth next to the meat.
